These are delicious and a great alternative to normal french fries. You can use any kind of root vegetable, but I love the flavor of parsnips in particular.
– 4 medium sized parsnips
– 1 tablespoon olive oil
– 1 1/2 tsp truffle salt*
Preheat the oven to 425.
Peel parsnips and cut into small pieces about 2-3 inches long and 1/2 an inch thick. Toss them in a bowl with olive or peanut oil and truffle salt. Place fries on a lined baking sheet and place them in the oven. Bake for about 12 minutes, then flip the fries, and bake another 12 minutes. Depending on your oven, they may take longer, but they are done once they have browned.
*You can use regular salt in place of truffle salt. BUT, truffle salt has a very distinct flavor and is also my favorite condiment. It’s totally worth the investment! It adds something special to these fries.
