Chipotle Pineapple Pulled Chicken

I’ve mentioned this before, but my boyfriend has been wonderful in helping with cooking dinners (and with practically everything else). I’m so lucky to have him!

The other day I was in the mood for a sweet and spicy crock pot chicken. Before even thinking about how to put this together, Ted offered to make it for me 🙂

The result: Amazing. And a total keeper.

I apologize for forgetting to photograph. It’s pretty difficult to make pulled meat look attractive anyway. I thought this picture was particularly successful! (link below)

Chipotle Pineapple Pulled Chicken (written and created by Ted)

Ingredients

4lb skinless chicken thighs

1/2 an onion

1 1/2 cup pineapple, cubed

1 cup chipotle in adobo

1 cup tomato sauce (no salt added)

3 tbsp cider vinegar

1 tbsp worcestershire sauce (I actually used HP sauce but either works)

~3 tbsp agave syrup (+/- as desired)

3-4 cloves garlic

2 tsp oregano

2 tsp cumin

1 tsp clove powder

1/2 cup cilantro, chopped

juice of one lime

Slice 1/4 of the onion and put it in the bottom of a crock pot along with all the chicken.
Mix the remaining ingredients into a sauce using a blender. Reserve 1 round slice of pineapple to place on top of everything (optional). Cook on low in the crock pot for 8-10 hours.
When done cooking, skim clear fatty liquid off top of pot. Shred tender chicken with 2 forks and mix into remaining sauce.
It can be served in tacos, over rice, or however you choose. Make sure you have hot sauce of choice on hand for those who want it a little spicier (I recommend El Yucateco green habanero).
