I feel like I’m quickly becoming a Greek yogurt queen. I literally use it in everything, and substitute for things like mayonnaise and cream. It has SO much protein and is way better for you than other higher fat/calorie dairy products.
This is how the cilantro broccoli slaw came about. It’s rare that I come up with recipes completely from scratch (you know, without using existing recipes as models and making changes here and there), but this was completely on the fly.
And it turned out spectacularly.
My boyfriend absolutely loves this recipe. Man approved. It’s great because you can basically eat it in unlimited quantities since it’s so good for you.
Cilantro Broccoli Slaw with Apples and Raisins
- 1 12 oz package broccoli slaw (broccoli, carrot, and cabbage mix)
- 1 fuji apple, peeled and chopped into bite sized pieces
- 1/4 cup raisins
- 1 1/4 cups greek yogurt
- 1/4 cup cilantro, chopped
- 1 tablespoon dijon mustard
- juice from 1/2 lemon
- juice from 1/2 lime
- 1/2 tablespoon red wine vinegar
- 1 teaspoon sugar
- salt and pepper, to taste
Whisk yogurt, citrus juices, red wine vinegar, sugar, salt, and pepper together in a small bowl. Add cilantro and stir until incorporated.
In a large bowl, add the slaw package, chopped apple, and raisins. Pour yogurt mixture over and mix well.
I recommend sticking this in the fridge for at least 20 minutes before serving, but it’s up to you (the longer, the better). I think it’s particularly delicious the next day.
