Sweet Egg Crepe (almost no carbs!)

Are you sick of savory eggs? Or do you just prefer sweet things for breakfast? I know the answer is yes for me!

I came up with this delicious egg crepe out of my love for crepes but disdain for carbs (well, not disdain in that I dislike them, but that they aren’t very good for my waistline). It is yummy, sweet, and filling, and is a great meal to eat before hitting the gym.

Sweet Egg Crepe (serves one)

2 eggs
1 1/2 teaspoons sugar
3/4 teaspoons whole wheat flour
1/4 teaspoon baking spice (or cinnamon)
1/2 teaspoon vanilla
1 teaspoon of jam/jelly/apple butter (i’ve tried both strawberry jam and apple butter and love both)
1/2 sliced banana or berries (or any other type of fruit)

Whisk all ingredients throughly in a small bowl. Place a skillet over medium heat and spray with cooking spray. Once pan is warm, add egg mixture and swirl around skillet until the pan is covered. Let sit until the top of the egg mixture sets (about 3 minutes). Slide a spatula underneath to loosen and flip over your crepe. Cook another 2-4 minutes on the other side. Remove from pan.

Spread jam over the crepe and then add sliced banana. Roll your egg crepe up and serve.

  1. I used this base recipe idea to make a wrap and then put taco meat, lettuce and cherry tomatoes in it. Instead of using sugar, cinnamon, wheat flour, and vanilla in the mix, I used a dash of cumin, chili powder, onion powder, coconut flour and sea salt to make a flavored “tortilla” – it turned out great and I will definitely do it again!!

  2. Toss those blueberries in a pan over med heat while you’re making the Crepes, and with a sprinkle of Stevia they’ll become the best topping ever! πŸ™‚ Cheers!
